Le tri: il s'agit d'un travail méticuleux au cours duquel on écarte toutes les châtaignes défectueuses et les fruits mal décortiqués pour effectuer un deuxième décorticage plus important.

Le passage au four ( facultatif) : les châtaignes sont biscuités dans un four préalablement chauffé à blanc. Cette étape confère une coloration à la farine de châtaigne corse.
Le moulin: cette étape consiste à moudre les châtaignes sèches et trier pour obtenir une farine fine et homogène.
